Mac n Cheese

Servings 4 meals

Ingredients

  • 1 box macaroni
  • 3 tbsp butter
  • 1/4 cup flour
  • 1/2 tsp salt
  • 1/2 tsp dry mustard
  • 1/4 tsp black pepper
  • 1/8 tsp smoked paprika
  • 2 1/2 cups milk
  • 3 cups shredded cheddar

Instructions

  1. Boil the pasta until al dente.  Drain and rinse with cool water to stop the cooking.  Set aside.

  2. Over medium heat, melt butter.  Add the flour, salt, dry mustard, pepper and smoked paprika.  Stir constantly over medium heat for about three minutes.  Gradually stir in the milk.

  3. Whisk constantly for about 10 minutes until the sauce thickens.  Remove from heat, and stir in 2 cups of the cheese until melted.  Pour the cheese sauce over pasta and toss gently.

  4. Add the pasta to aluminum tins.  Sprinkle with more shredded cheddar.  Let cool to room temperature before freezing.

  5. To reheat: Thaw overnight.  Remove lid and bake for 25-30 minutes at 375.
